Low Carb Pancake Stacks
These "low carb pancakes" are a cross between a crepe and a wrap. They totally hit the spot when you are taking a break from indulging in fluffy cakes for breakfast. I mixed some sour cream into some sliced strawberries and a little Stevia and sandwiched them in between two of the "crepewraps". Then topped with more strawberries and some homemade whipped heavy cream that was sweetened with just a touch of agave syrup. The finished product was this delicious pancake stack.
Low Carb "Pancakes"
2 oz. Cream cheese
2 Eggs
1 tsp. or so of some sort of low carb friendly sweetener. I used Stevia.
Mix all ingredients together with your mixer until it turns into a batter. Melt a little butter in your pan and ladle about 1/4 of the batter into your pan. Flipping over once the sides began to brown, it doesn't take long. The above ingredients will make about 4 pancakes which equals 2 pancake stacks. Enjoy!
