Chorizo Hash

 


Breakfast is one of my favorite foods to eat, savory breakfasts of course. I am not into pancakes, waffles, French toast or any of that sweet bread-y stuff. I like breakfasts meats, and eggs and potatoes and I like chorizo. I am not talking about the Spanish type of chorizo that is dried and cured, all though that stuff is good to. I am talking about Mexican chorizo, the raw stuff made out of pork that is seasoned and a little spicy. It's delicious. 



Chorizo Hash 

5 oz.  Mexican style pork chorizo ( the above chorizo is 10oz., I use half of it for this hash. 

4 Potatoes diced

2 Green onions chopped

1 to 2 tbs. Cilantro, chopped finely

Oil or lard for cooking

Cook the chorizo in a small frying pan until halfway done and set aside. In a larger frying pan heat up some cooking oil/lard enough to cover the bottom of the pan and fry the diced potatoes until they just start to soften and brown. Add the chorizo along with the all the grease drippings into the potatoes and continue to crisp the potatoes up. Add the green onions and cilantro. Serve with fried eggs and a tortilla.
