Potato Chip Chicken Strips
So, I made these potato chip crusted chicken strips for Penelope because... well why not? They are gluten free so if you are missing chicken strips because you can't have flour these are a plus, they are super easy to make, and they are baked not fried!
Potato Chip Crusted Chicken Strips
1 Boneless, skinless chicken breast sliced into tenders (1 chicken breast will make approximately 5 to 6 strips.)
Wavy Lays potato chips
1 Egg
1 tbs Water
Salt & Pepper
Olive oil
Preheat oven to 400 and line a baking pan with parchment paper. In your food processor crush a couple of handfuls of potato chips and place in a shallow bowl. In another bowl whisk the egg and water until smooth. Season your chicken with S&P. Dip each tender in the egg and then coat into the potato chips. Place the coated tenders on the baking pan and drizzle with a little olive oil. Bake for 20 to 25 minutes turning halfway. These were a big heat with Penelope and probably any other kid out there.
