My Arroz con Pollo

Here is my version of Arroz con Pollo (Rice w/ Chicken) that I made the other night using the little ingredients I had in the our kitchen. It came out pretty tasty!


My Arroz con Pollo

3 Large boneless, skinless chicken breasts
Olive oil
Garlic salt
Onion powder
Dried parsley
1 cup Uncooked rice
About a 1/2 cup of frozen peas or more
3 Slices uncooked bacon
About 1 tbs. of tomato paste
About 1 tbs. chicken bouillon
2 cups of Water

In a large skillet cover the bottom with olive oil and heat. Season chicken with garlic salt, onion powder, and dried parsley. Brown chicken for about 4 minutes on each side and then remove from pan and set aside. Cut bacon into small strips ( I always use my kitchen shears for this) and fry in the same pan that the chicken was cooked in. Once it starts to crisp up add the frozen peas and mix. Then add the uncooked rice and fry until it just starts to take on some color. Turn heat up to high. Add the tomato paste and 2 cups of water along with the chicken bouillon and stir well. As soon as mixture starts to boil add the chicken breasts, cover pan and turn heat to low. Simmer for about 25-30 minutes.

We had leftovers and the following morning, Chris fried the rice up with some chorizo and we ate it for lunch, it was tasty with a dollop of sour cream.
