Bacon Fried Rice


For as long as I can remember my mom has been making bacon fried rice. It is one of her recipes that I continue to make today. It is so simple and yet so satisfying. Enjoy!

Bacon Fried Rice

1 cup Cooked white rice (room temperature)
6 to 7 slices of Bacon
4 to 5 Green onions
Soy Sauce

I use my kitchen shears to slice the bacon in small strips. In a wok I fry the bacon until it just starts to crisp up. While it is crisping I slice the green onion and set aside. When the bacon is done I add the room temperature rice and fry it in the bacon grease incorporating the crisp bacon pieces. Then I add the soy sauce. I don't measure how much I put in, basically I pout until the rice starts to absorb the brown color of the soy sauce. At the very end I add the green onion and mix thoroughly into the rice. If you have leftovers you can have some in the morning. Top it with a friend egg and you now have a delicious breakfast fried rice!
