Nachos made with cheese chips, I call them Chachos!
Chachos
2 cups Shredded cheddar cheese
1/4 cup of Grated Parmesan cheese
Garlic salt
Onion powder
Cumin
Chili powder
Toppings:
Seasoned ground beef
Sour Cream
Guacamole
Salsa
Whatever you fancy on your chachos!
Heat oven to 400. Line a cookie sheet with parchment paper then sprinkle the cheese on top and spread thinly. Sprinkle the Parmesan on top of that. Season with the garlic salt, onion powder, cumin and chili powder. Pop in the oven for about 10 minutes. The cheese will start to bubble up and brown on the edges. Remove pan from oven and let cool for about 10 minutes. Remove the now crisp cheese from the parchment paper and place on a cutting board. Cut into triangle shapes using your kitchen shears. Ta-da! Then top with all your favorite chacho toppings. This will make 2 to 3 servings.
Here is my Guacamole recipe as well, because people love it.
Guacamole
1 Avocado
1/2 Tomato
1 Serrano Pepper
1 Green Onion
Bunch of Cilantro
Squirt of Lime Juice
Mash up the avocado but still leave it a little chunky. Chop of the veggies and add to the avocado. Mix and end with a squirt of lime. Double or triple the recipe if you want to make a bigger batch. Guacamole doesn't sit well for long before it starts turning brown and then black and icky so try to make it right before you are going to eat it and only as much as you can finish. Yum!
